A TASTE OF NORFOLK

Great beer deserves great food and funnily enough, we think that great food deserves great beer.

Here we aim to bring you a selection of these recipes using these  foods for you to enjoy. You will also see that we have sneaked in a magic ingredient – Moon Gazer Ale.

So, why not try the Moon Gazer recipes below?

Breakfast beer bacon

A simple beer marinade will bring your breakfast rashers to life...

  • 8-10 slices of thick cut bacon
  • 230ml Moon Gazer Ruby ale
  • 90g brown sugar

Place the bacon in a bowl and pour over the beer, making sure the bacon is all covered. Marinate for one hour.

Preheat the oven to 180C

Pour out the beer and dredge each piece of bacon in the brown sugar, rubbing on until covered.

Place a  wire metal rack onto a baking sheet and bake the bacon for 20-25 minutes, turning once.

 

Beer marinated BBQ grilled chicken

80ml olive oil

1 teaspoon sea salt

½ teaspoon ground black pepper

½ teaspoon paprika

½ teaspoon cumin

¼ teaspoon cayenne pepper

2 cloves garlic, chopped

3 tablespoons chopped onion

3 tablespoons chopped fresh parsley

350ml Moon Gazer amber ale

Pour olive oil into a bowl.

Mix together salt, pepper, paprika, cumin, and cayenne pepper and add to olive oil.

Add garlic, onions, and parsley. Mix together well with a fork. Slowly add beer as it will cause the mixture to foam and bubble slightly.

Pour marinade over the chicken in a sealable bag. Remove as much air as possible from the bag and seal. Turn the bag from side to side to make sure all chicken has been coated with the marinade. Place the bag flat on a small, rimmed kitchen sheet pan and into the refrigerator overnight for best results, turning the bag over every few hours to keep the chicken coated.

Remove the chicken from the marinade and BBQ/grill in the normal way.

Beer marinated steaks

Create a truly tasty melt in the mouth steak, which you cook on the BBQ or fry

4 Sirloin or  Ribeye Steaks 

350ml Moon Gazer Gold IPA

1 x clove garlic finely chopped

1 x red onion, chopped

2 teaspoons  Worcestershire sauce

2 teaspoons of  brown sugar

1 teaspoon of English mustard

2 tablespoons of extra virgin olive oil

Good pinch of salt and pepper

Place steaks in a large, sealable plastic bag.

 Combine all ingredients with steaks; press out the air and refrigerate for at least 2 hours but preferably overnight.

Remove the steaks form the marinade and cook to your liking.

 

Beef and blue cheese casserole with Moon Gazer Ale

A really hearty dish of comfort food. Delicious succulent beef, blended with rich blue cheese and some Moon Gazer Ruby or Dark Mild. We love it, hope you do to...

Serves 4

Tasty stuff you need:

  • Moon Gazer Dark Mild or Ruby Ale: 500ml bottle (or a carry out from the local pub).
  • 150ml beef stock
  • 450g of stewing beef, cut into 2-3cm cubes
  • 200g of Blue Cheese ( Stilton is fine but Norfolk Binham Blue is awesome)
  • A good glug of olive oil
  • 25g butter
  • 2 carrots – peeled and sliced quite thickly
  • 3 medium red onions – peeled and chopped
  • 2 cloves of chopped garlic
  • 1 red pepper – chopped
  • 6 mushrooms – chopped
  • 1 teaspoon chopped thyme
  • 2 heaped tablespoons of plain flour
  • Salt and pepper for seasoning

Get cooking:

It takes a little time, but it’s nice and simple...

  • Preheat your oven to 180°C
  • Using a large oven proof pan, add the oil and using a low heat gently fry the onions for about  10 minutes
  • Add in the butter, red peppers and carrots and gently fry for another minute.
  • Turn the heat up and add the beef, mushrooms, thyme and a good pinch of salt and pepper. Fry for 3 minutes, stirring as you do.
  • Now the good bit, add in 500ml of Moon Gazer Ale (minus the gulp you won’t be able to resist having) along with the beef stock and flour.
  • Bring the pan to a simmer, then place the lid on and transfer to the pre-heated oven for 1.5 hours.
  • Remove the pan from the oven, give it a good stir and add in 100g of the blue cheese. Return the pan to the oven for another hour.
  • Remove the pan from the oven, turning the oven down to 150°C, add the remainder of the blue cheese (100g), stir well and return to the oven for 30 mins.
  • That’s it... serve up with some creamy mashed potatoes and garden peas.
